So Tuesday afternoons are the busiest of the Lokey family thus far into the school year, but I am refusing to just "pick something up" for dinner. With a little planning and preparation done early in the day we were able to gather for a quick but healthy meal around the dinner table.
So this is just sliced french bread brushed with olive oil and toasted in the broiler. Then I topped each slice of bread with a thin slice of fresh mozzarella and a couple thin slices of hard salami and toast a bit longer in the broiler. Last, I again top each slice with romaine lettuce that has been lightly tossed with Caesar dressing. Add some angel hair pasta tossed with olive oil and sea salt, and whole green beans. A quick home cooked meal!
